Zucchini Fritters


1 medium zucchini

1/4 fennel

1 egg

50 g almond flour

A pinch of salt

50 g grated mozzarella

Coconut oil

Thai basil

1 scoop MCT oil in unflavoured powder

Preparation: Grate the zucchini on a large mesh grater, squeeze the water. Cut the fennel into smaller pieces, add the egg, flour, mozzarella and salt. Add MCT Oil Powder. Mix. Fry the pancakes in hot coconut oil until they turn golden. Garnish with basil. Zucchini pancakes: (recipe for one serving)
