Zucchini Fritters

Ingredients:

  • 1 medium zucchini
  • 1/4 fennel
  • 1 egg
  • 50 g almond flour
  • A pinch of salt
  • 50 g grated mozzarella
  • Coconut oil
  • Thai basil
  • 1 scoop MCT oil in unflavoured powder

Preparation:

  • Grate the zucchini on a large mesh grater, squeeze the water.
  • Cut the fennel into smaller pieces, add the egg, flour, mozzarella and salt.
  • Add MCT Oil Powder. Mix.
  • Fry the pancakes in hot coconut oil until they turn golden.
  • Garnish with basil.
