Zucchini Fritters
Ingredients:
- 1 medium zucchini
- 1/4 fennel
- 1 egg
- 50 g almond flour
- A pinch of salt
- 50 g grated mozzarella
- Coconut oil
- Thai basil
- 1 scoop MCT oil in unflavoured powder
Preparation:
- Grate the zucchini on a large mesh grater, squeeze the water.
- Cut the fennel into smaller pieces, add the egg, flour, mozzarella and salt.
- Add MCT Oil Powder. Mix.
- Fry the pancakes in hot coconut oil until they turn golden.
- Garnish with basil.
